Step-by-Step Instructions for Zucchini Grilled Cheese
  1. Grate 2 medium zucchinis and squeeze out moisture.
  2. In a bowl, mix drained zucchini with 1 beaten egg, ¼ cup grated Parmesan, 2 tablespoons cornstarch, salt, and pepper until dough-like.
  3. Heat a non-stick skillet over medium and melt 2 tablespoons of garlic butter.
  4. Shape zucchini mixture into ½ inch thick patties and cook for 3–4 minutes on each side until golden brown.
  5. Assemble sandwich with shredded cheddar on one patty, topped with another patty and cook for 3 minutes until cheese melts.
  6. Let the sandwich rest for 60 seconds, then slice and serve warm.
