Ingredients
  

Dough
  • 1 batch Pizza Dough substitute with gluten-free dough if desired
  • 2 tablespoons Olive Oil extra virgin for enhanced flavor
Toppings
  • 2 cloves Garlic minced
  • 1 whole Lemon thinly sliced, preferably organic
  • 8 ounces Mozzarella Cheese fresh, torn into pieces
  • 1 teaspoon Salt coarse sea salt
  • 1 teaspoon Black Pepper freshly cracked
  • 1 teaspoon Thyme fresh or dried
Optional Extras
  • 2 tablespoons Chopped Parsley for garnish
  • 1 teaspoon Red Pepper Flakes for heat, if desired
  • 1 cup Fresh Arugula for topping after baking

Method
 

Preparation
  1. Preheat your oven to a hot 475-500°F (245°C).
  2. On a lightly floured surface, roll out your pizza dough into a 10-12 inch circle.
  3. Brush the surface of your rolled dough with a drizzle of olive oil and scatter minced garlic over it.
  4. Evenly distribute fresh mozzarella across the dough.
  5. Carefully lay thinly sliced lemon rounds atop the mozzarella cheese.
  6. Sprinkle coarse sea salt, freshly cracked black pepper, and thyme over the pizza.
  7. Carefully transfer your pizza into the oven and bake for 10-13 minutes.
  8. Once out of the oven, drizzle olive oil and garnish with parsley, red pepper flakes, or arugula.
  9. Allow the pizza to cool for a couple of minutes, then slice and serve warm.
