  • 2 cups Apples Use your favorite variety.
  • 1/2 cup Honey Can substitute with maple syrup.
  • 2 large Eggs Use flax eggs for a vegan option.
  • 1 teaspoon Cinnamon
  • 1 tablespoon Baking Powder
  • 1/4 teaspoon Salt
Optional Add-Ins
  • 1/2 cup Nuts Walnuts or pecans.
  • 1/2 cup Raisins Dried cranberries can also be used.

Method
 

Steps
  1. Preheat your oven to 350°F (180°C) and line a baking pan with parchment paper.
  2. In a large mixing bowl or blender, combine all ingredients except for ¼ cup of rolled oats and blend until smooth. Fold in the reserved oats.
  3. Pour the batter into the lined baking pan and smooth out the top with a spatula.
  4. Bake for 20-30 minutes, testing for doneness with a toothpick.
  5. Allow the cake to cool in the pan for 10-15 minutes before transferring to a wire rack.
  6. Once cool, slice and serve with a sprinkle of cinnamon or drizzle of honey.
