  • 2 Avocados Ripe for best flavor
  • 1 cup Black Beans Rinsed
  • 0.5 cup Corn Frozen or canned
  • 0.25 cup Red Onion Diced
  • 1 tbsp Lime Juice Fresh or bottled
For Seasoning & Flavor
  • 1 clove Garlic Minced
  • 1 tsp Cumin Optional
  • 1 pinch Crushed Red Pepper To taste
  • 0.5 cup Fresh Cilantro Chopped, optional
  • 1 tsp Sea Salt To taste
  • 1 tsp Black Pepper Freshly cracked
  • 1 tbsp Olive Oil For frying

Step-by-Step Instructions
  1. In a medium bowl, mash 2 ripe avocados until smooth. Mix in 1 minced garlic clove, the juice of 1 lime, and season with sea salt and black pepper. Add a pinch of crushed red pepper.
  2. Fold in 1 cup of rinsed black beans, 0.5 cup of corn, and 0.25 cup of diced red onion into the avocado mixture. Stir in a handful of cilantro if desired.
  3. Preheat a non-stick skillet over medium heat and add 1 tablespoon of olive oil.
  4. Place a tortilla in the skillet and spoon half of the avocado mixture onto one half. Fold the tortilla over and press down to seal.
  5. Cook the folded quesadilla for 3-4 minutes per side until golden brown and crispy.
  6. Remove the quesadilla and let it rest briefly before slicing into wedges. Serve immediately.
