For the Tuna Mixture
  • 1 can Tuna drained
  • 2 tablespoons Mayonnaise or Greek yogurt
  • 2 tablespoons Gherkins chopped
  • 2 tablespoons Sundried Tomatoes chopped
For the Wrap
  • 2 large Wheat Tortilla Wraps 10-inch
  • 1 cup Spinach fresh
  • 1 medium Bell Pepper sliced
  • 1 cup Cheddar Cheese grated

Method
 

Step-by-Step Instructions
  1. In a mixing bowl, combine the drained tuna, chopped gherkins, sundried tomatoes, and mayonnaise. Stir well and season to taste.
  2. Take a large wheat tortilla and place a handful of fresh spinach in the center. Spoon half of the prepared tuna mixture over the spinach and layer sliced bell peppers followed by grated cheddar cheese.
  3. Fold the top and bottom edges of the tortilla over the filling, then fold in the sides to secure.
  4. Brush a griddle pan with oil and preheat over medium-high heat. Toss a drop of water onto the pan to check if it's hot.
  5. Place the folded wraps onto the heated griddle and weigh them down with another pan. Cook for about 2-3 minutes until golden brown.
  6. Flip the wraps carefully and cook the other side for an additional 2-3 minutes until golden brown and cheese begins to melt.
  7. Remove the wraps from the griddle and let them cool briefly before slicing in half. Serve warm with salad.
