- In a mixing bowl, combine the drained tuna, chopped gherkins, sundried tomatoes, and mayonnaise. Stir well and season to taste.
- Take a large wheat tortilla and place a handful of fresh spinach in the center. Spoon half of the prepared tuna mixture over the spinach and layer sliced bell peppers followed by grated cheddar cheese.
- Fold the top and bottom edges of the tortilla over the filling, then fold in the sides to secure.
- Brush a griddle pan with oil and preheat over medium-high heat. Toss a drop of water onto the pan to check if it's hot.
- Place the folded wraps onto the heated griddle and weigh them down with another pan. Cook for about 2-3 minutes until golden brown.
- Flip the wraps carefully and cook the other side for an additional 2-3 minutes until golden brown and cheese begins to melt.
- Remove the wraps from the griddle and let them cool briefly before slicing in half. Serve warm with salad.
