- Peel, slice, and dice one ripe pear. Toss with lemon juice and set aside.
- Heat a skillet over medium heat, add pancetta and cook until crispy (4-5 minutes).
- In the same skillet, add sliced shallot and cook for about 1 minute. Stir in Dijon mustard.
- Add frozen peas and diced pear to the skillet, stir and cook for about 5 minutes.
- Stir in half of crispy pancetta, parsley, and black pepper. Mix well and serve, topping with remaining pancetta and lemon zest.
