  • 1 medium Shallot Sliced.
For the Flavor
  • 3 tablespoons Pancetta Diced.
  • 1 tablespoon Dijon Mustard No substitutions.
For the Sweetness
  • 1 medium Pear Diced.
For the Zing
  • 1 tablespoon Lemon Juice Freshly squeezed.
  • 1 tablespoon Lemon Zest
For Garnish
  • 2 tablespoons Parsley Chopped.
  • to taste Black Pepper Freshly ground.

Method
 

Step-by-Step Instructions
  1. Peel, slice, and dice one ripe pear. Toss with lemon juice and set aside.
  2. Heat a skillet over medium heat, add pancetta and cook until crispy (4-5 minutes).
  3. In the same skillet, add sliced shallot and cook for about 1 minute. Stir in Dijon mustard.
  4. Add frozen peas and diced pear to the skillet, stir and cook for about 5 minutes.
  5. Stir in half of crispy pancetta, parsley, and black pepper. Mix well and serve, topping with remaining pancetta and lemon zest.
