Step-by-Step Instructions
  1. Heat the olive oil in a large pot over medium heat until shimmering.
  2. Sauté diced onion and red bell pepper for about 5 minutes until softened.
  3. Add minced garlic and cook for an additional minute until fragrant.
  4. Mix in chili powder, cumin, smoked paprika, and coriander. Cook for 1 minute.
  5. Combine chopped sweet potatoes, black beans, diced tomatoes, tomato paste, and vegetable broth. Stir well.
  6. Bring to a gentle simmer, cover, and cook for 25-30 minutes until sweet potatoes are tender.
  7. Remove lid and simmer uncovered for an additional 5-10 minutes to thicken.
  8. Taste and adjust seasoning with salt and pepper before serving.
