Ingredients

For the Chicken
  • 4 pieces Bone-In Chicken Use boneless for quicker cooking.
  • 4 cloves Garlic Fresh is recommended but garlic powder can work in a pinch.
For the Marinade
  • 2 cups Fresh Oranges Substitute with blood oranges or mandarins for variation.
  • 1/4 cup Honey Maple syrup can be a substitute.
  • 2 tablespoons Fresh Thyme Can be replaced by rosemary or oregano.
  • 1/4 cup Olive Oil Any cooking oil can be substituted.
  • 1 teaspoon Red Pepper Flakes Optional for heat.

Equipment

  • Mixing Bowl
  • Zip-top bag or shallow dish
  • Roasting pan
  • Meat thermometer
  • Oven

Method

Step-by-Step Instructions
  1. Begin by patting your bone-in chicken pieces dry with paper towels to remove excess moisture. Season the chicken generously with salt and pepper, ensuring every piece gets nicely coated.
  2. In a mixing bowl, combine the fresh orange juice, honey, minced garlic, fresh thyme, and olive oil for a zesty marinade. Whisk until well blended.
  3. Place the seasoned chicken into a zip-top bag or shallow dish, then pour the marinade over. Seal or cover, and let it marinate for at least 30 minutes, or ideally up to 24 hours.
  4. Preheat your oven to 400°F (200°C). Carefully arrange your oven racks.
  5. Transfer your marinated chicken pieces to a roasting pan, skin side up. Pour the remaining marinade over the chicken.
  6. Roast in the preheated oven for about 30 minutes, or until the internal temperature reaches 165°F (74°C). Baste the chicken with the pan juices halfway through.
  7. In the last few minutes of cooking, switch the oven to broil for crispy skin. Watch closely to avoid burning.
  8. Remove the chicken from the oven and allow it to rest for a few minutes before serving.

Notes

Ensure your chicken reaches 165°F (74°C) for safe and juicy results. Allowing to marinate longer enhances flavor. Avoid overcrowding when roasting for even cooking.
