Cooking Steps
  1. Heat the olive oil in a large skillet over medium-high heat for about 1-2 minutes.
  2. Add diced red bell pepper and halved cherry tomatoes to the skillet. Sauté for 4-5 minutes.
  3. Stir in minced garlic and sauté for an additional 1 minute until fragrant.
  4. Fold in baby spinach and the whites of green onions, cooking for about 2-3 minutes until wilted.
  5. In the same skillet, add ground beef, season with oregano, salt, and pepper; cook for 6-8 minutes until browned.
  6. Return the sautéed vegetable mixture to the skillet with the cooked ground beef and stir thoroughly.
  7. Sprinkle with remaining green onion pieces and crumbled feta cheese if using. Heat through for an extra minute.
  8. Serve warm with rice, quinoa, or wrapped in lettuce.
