- Preheat your oven to 350°F (175°C) and line an 8x8-inch pan with parchment paper.
- In a large mixing bowl, combine softened butter, granulated sugar, and brown sugar. Beat until pale and fluffy, about 2-3 minutes.
- Add the egg and vanilla extract to the mixture, mixing on low speed for about 1 minute.
- Sift in the flour, baking powder, and salt, gently folding until just combined. The dough should be slightly sticky.
- Spread the cookie dough evenly into the prepared pan and bake for 15 minutes until light golden brown.
