Step-by-Step Instructions
- Preheat your oven to 375°F (190°C). Season the boneless pork chops with salt, black pepper, garlic powder, and onion powder.
- In a skillet, heat olive oil over medium-high heat. Brown the pork chops for 3-4 minutes on each side until cooked through.
- Reduce heat, add butter, and sauté the thinly sliced onions for about 5 minutes until translucent.
- Sprinkle flour over onions, cook for 2 minutes, then whisk in milk and chicken broth. Cook until thickened.
- Stir in shredded cheddar cheese, thyme, and paprika until the cheese melts.
- Grease a 9x13-inch baking dish. Layer half the potatoes, half cheese sauce, pork chops, remaining potatoes, and remaining cheese sauce.
- Sprinkle reserved cheddar cheese on top. Cover with foil and bake for 45 minutes.
- Remove foil, bake for an additional 15 minutes until golden brown.
- Let rest for 10 minutes before serving. Garnish with fresh parsley if desired.

Notes
Slice potatoes evenly for even cooking. Use a meat thermometer to avoid overcooking the pork chops.
