  2. In a skillet, heat olive oil over medium-high heat. Brown the pork chops for 3-4 minutes on each side until cooked through.
  3. Reduce heat, add butter, and sauté the thinly sliced onions for about 5 minutes until translucent.
  4. Sprinkle flour over onions, cook for 2 minutes, then whisk in milk and chicken broth. Cook until thickened.
  5. Stir in shredded cheddar cheese, thyme, and paprika until the cheese melts.
  6. Grease a 9x13-inch baking dish. Layer half the potatoes, half cheese sauce, pork chops, remaining potatoes, and remaining cheese sauce.
