For the Potatoes
  • 2 pounds Waxy Potatoes Yukon Gold preferred.
For the Seasoning
  • 3 tablespoons Good Olive Oil Avocado oil can be substituted.
  • 2 tablespoons Magic Seasoning Blend Mix of spices; adjust to taste.
For Moisture
  • 1 cup Splash of Stock Vegetable or chicken stock works.
  • 2 tablespoons Butter Dots Optional, omit for dairy-free.

Method
 

Step-by-Step Instructions
  1. Wash the waxy potatoes and slice them into thick rounds. Arrange them at the bottom of the slow cooker.
  2. Drizzle olive oil over the potatoes and sprinkle half of the Magic Seasoning Blend. Toss gently.
  3. Place the chicken pieces on top of the seasoned potatoes.
  4. Sprinkle the remaining Magic Seasoning Blend over the chicken and rub it in.
  5. Pour the splash of stock around the edges of the slow cooker.
  6. Dot small pieces of butter over the top, if using.
  7. Cover and cook on low for 6 hours.
  8. Allow to rest for a few minutes before serving, spooning the pan juices over the dish.
