Step-by-Step Instructions
  1. Heat a skillet over medium-high heat and add a tablespoon of olive oil. Season beef stew meat cubes with salt and pepper, then sear in batches for 2-3 minutes on each side until browned.
  2. In the same skillet, reduce heat and melt 4 tablespoons of unsalted butter. Add minced garlic and sauté for about 1 minute until fragrant.
  3. Pour in 1 cup of beef broth and 2 tablespoons of Worcestershire sauce into the skillet. Stir in 1 teaspoon each of dried thyme and rosemary.
  4. Toss halved baby potatoes into the slow cooker, mixing them with the beef and sauce. Place remaining butter on top.
  5. Cover the slow cooker and set to cook on low for 6-7 hours or high for 3-4 hours.
  6. Once cooking time is complete, check seasoning and adjust with salt and pepper. Garnish with chopped parsley before serving.
