- Heat a skillet over medium-high heat and add a tablespoon of olive oil. Season beef stew meat cubes with salt and pepper, then sear in batches for 2-3 minutes on each side until browned.
- In the same skillet, reduce heat and melt 4 tablespoons of unsalted butter. Add minced garlic and sauté for about 1 minute until fragrant.
- Pour in 1 cup of beef broth and 2 tablespoons of Worcestershire sauce into the skillet. Stir in 1 teaspoon each of dried thyme and rosemary.
- Toss halved baby potatoes into the slow cooker, mixing them with the beef and sauce. Place remaining butter on top.
- Cover the slow cooker and set to cook on low for 6-7 hours or high for 3-4 hours.
- Once cooking time is complete, check seasoning and adjust with salt and pepper. Garnish with chopped parsley before serving.
