- Preheat your oven to 400°F (200°C). Line a large rimmed baking sheet with parchment paper or grease it.
- Combine diced sweet potatoes, yellow onion, and bell pepper in a bowl. Drizzle with olive oil and season with salt, pepper, smoked paprika, cumin, and optional thyme. Toss to coat.
- Spread the sweet potato mixture on one half of the baking sheet. On the other half, add ground beef, breaking it up, drizzle with olive oil and season.
- Bake for 20–25 minutes, stirring halfway through, until sweet potatoes are tender and beef is browned.
- If using eggs, create wells in the hash and crack in the eggs. Return to oven and bake for an additional 6–8 minutes.
- Garnish with fresh parsley and serve warm.
