  • 1 tsp Cumin Essential for depth of flavor.
  • 1 tsp Thyme/Oregano Optional, adjust to taste.

  • 2 eggs Eggs Optional, to be cracked on top.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C). Line a large rimmed baking sheet with parchment paper or grease it.
  2. Combine diced sweet potatoes, yellow onion, and bell pepper in a bowl. Drizzle with olive oil and season with salt, pepper, smoked paprika, cumin, and optional thyme. Toss to coat.
  3. Spread the sweet potato mixture on one half of the baking sheet. On the other half, add ground beef, breaking it up, drizzle with olive oil and season.
  4. Bake for 20–25 minutes, stirring halfway through, until sweet potatoes are tender and beef is browned.
  5. If using eggs, create wells in the hash and crack in the eggs. Return to oven and bake for an additional 6–8 minutes.
  6. Garnish with fresh parsley and serve warm.
