Step‑by‑Step Instructions
  1. Preheat your oven to 400°F (200°C) and coat a large baking sheet with canola oil.
  2. Spread sourdough and multigrain bread cubes on the baking sheet and bake for about 10 to 13 minutes.
  3. In a medium bowl, combine poultry seasoning, garlic powder, onion powder, kosher salt, and black pepper.
  4. Sear chicken thighs in a skillet with canola oil for 2 to 3 minutes on each side until browned.
  5. Sauté minced garlic, sweet onion, diced carrots, and celery in butter for 4 to 5 minutes.
  6. Stir in parsley, sage, thyme, toasted bread cubes, and chicken stock; let sit for 5 minutes.
  7. Arrange chicken on the baking sheet with stuffing around it and bake for 20 to 25 minutes.
  8. Remove from oven and let it rest for a few minutes before serving.
