  • 1 pound fresh edamame pods look for frozen if fresh isn’t available
  • 1 teaspoon salt consider using sea salt for more flavor
For the Flavoring
  • 2 tablespoons olive oil can substitute with avocado oil
  • 3-4 cloves garlic use fresh for best taste
  • 1/2 cup Parmesan cheese freshly grated for best results
  • to taste black pepper or use red pepper flakes for heat
Optional Garnish
  • 2 tablespoons chopped parsley or swap in chives
  • 1/2 teaspoon lemon zest use organic lemons

Method
 

Step-by-Step Instructions
  1. Bring a large pot of salted water to a boil over high heat. Add fresh edamame pods and cook for 3-5 minutes until tender but still bright green. Drain and set aside.
  2. In a medium skillet, warm 2 tablespoons of olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant and golden.
  3. Add the drained edamame to the skillet, tossing in the garlic oil. Sprinkle with salt and black pepper, stir for 2-3 minutes.
  4. Remove from heat and sprinkle in ½ cup of Parmesan cheese, tossing to coat the edamame.
  5. Garnish with chopped parsley and lemon zest. Serve immediately while warm.
