- In a medium bowl, combine BBQ sauce, maple syrup, and soy sauce. Whisk until smooth and set aside.
- Heat oil in a large pan over high heat, add the sliced beef in a single layer, sauté for 2-3 minutes until browned, then stir and cook for another 2 minutes. Season with salt, pepper, ginger, and garlic.
- Drizzle in some sauce and stir-fry for another minute. Remove beef and keep warm.
- Add more oil to the pan, toss in sliced mushrooms, and stir-fry about 5 minutes until golden. Remove from pan.
- Heat oil again, add onions, zucchini, and bell pepper. Stir-fry for 8 minutes until soft and golden.
- Return beef and mushrooms to the pan, drizzle with remaining sauce, stir, and heat through for 1-2 minutes. Serve over rice.
