- In a large pot, heat oil over medium heat. Add sausage and cook for 5-7 minutes until browned and crispy. Remove sausage and set aside.
- In the same pot, add onion, carrots, and celery. Sauté for around 5 minutes until tender and translucent.
- Add minced garlic to the pot and cook for an additional minute until fragrant, but do not let it burn.
- Stir in diced sweet potatoes, chicken broth, thyme, salt, and pepper. Bring to a boil, then reduce heat and simmer for about 20 minutes.
- Blend the soup until creamy using an immersion blender or in batches with a countertop blender.
- Stir in heavy cream and reintroduce the cooked sausage. Heat through for 3-5 minutes on low.
