Method
 

Step-by-Step Instructions
  1. In a large pot, heat oil over medium heat. Add sausage and cook for 5-7 minutes until browned and crispy. Remove sausage and set aside.
  2. In the same pot, add onion, carrots, and celery. Sauté for around 5 minutes until tender and translucent.
  3. Add minced garlic to the pot and cook for an additional minute until fragrant, but do not let it burn.
  4. Stir in diced sweet potatoes, chicken broth, thyme, salt, and pepper. Bring to a boil, then reduce heat and simmer for about 20 minutes.
  5. Blend the soup until creamy using an immersion blender or in batches with a countertop blender.
  6. Stir in heavy cream and reintroduce the cooked sausage. Heat through for 3-5 minutes on low.
