  1. Heat the oil in a large saucepan over medium heat until shimmering, then add ground beef and sauté for about 5 minutes until browned.
  2. Stir in grated ginger and soy sauce, cooking for 30 seconds to enhance flavors.
  3. Pour in 1 cup of water and add white pepper, bringing to a gentle simmer, covered, for 10 minutes.
  4. While simmering, boil a large pot of water and cook vermicelli noodles according to package instructions, around 4-6 minutes.
  5. Combine corn flour with 1/2 cup of water to create a slurry, then stir it into the beef mixture, cooking for an additional 2-3 minutes until thickened.
  6. Fold in cooked vermicelli noodles into the beef sauce, cook together for 1-2 minutes, and serve topped with spring onions and optional dark vinegar and chili oil.
