  • 1 teaspoon Salt
  • 0.5 teaspoon Ground Black Pepper Freshly cracked
For the Garlic Yogurt Sauce
  • 1 cup Plain Yogurt Greek or dairy-free
  • 0.5 medium Lemon Juiced
  • 1 tablespoon Olive Oil For brushing grill

Step-by-Step Instructions
  1. In a large bowl, combine ground chicken, finely chopped onion, minced garlic, chopped parsley, ground cumin, ground coriander, salt, and black pepper. Mix well for about 2-3 minutes.
  2. Dampen your hands with water and form small, compact oval-shaped koftas from the mixture. Place on a greased plate.
  3. Preheat your grill to medium-high heat, around 400°F (200°C), and brush the grates with olive oil.
  4. Place the koftas on the grill and cook for about 10-12 minutes, turning occasionally until golden brown and cooked through.
  5. In a medium bowl, whisk together plain yogurt, lemon juice, and a pinch of salt until smooth.
  6. Serve the koftas warm with the garlic yogurt sauce, and optionally with pita bread or a salad.
