Method
 

Preparation Steps
  1. Preheat the Oven to 425°F (220°C) and prepare a baking sheet lined with parchment paper.
  2. Peel and dice the sweet potatoes, toss with olive oil, salt, and black pepper, then roast for 25-30 minutes.
  3. While roasting, rinse and drain the black beans, chop the cherry tomatoes and red onion, and cube the avocado.
  4. In a small bowl, whisk together the olive oil, lime juice, cumin, salt, and black pepper for the dressing.
  5. Combine the roasted sweet potatoes, black beans, cherry tomatoes, red onion, and cilantro in a large mixing bowl.
  6. Pour the dressing over the salad mixture, toss gently to combine, and adjust seasoning as needed.
  7. Fold in the avocado just before serving to maintain its texture.
  8. Transfer to a serving platter and garnish as desired before serving.
