Method
 

Steps
  1. Bloom the gelatin by sprinkling it over ½ cup of cold filtered water in a small bowl and let it sit for about 5 minutes.
  2. Heat 1½ cups of water and 1 cup of strawberry juice in a saucepan on low heat, stirring gently until warmed.
  3. Remove from heat and stir in the bloomed gelatin until completely dissolved.
  4. Mix in the collagen peptides and chia seeds, whisking thoroughly to combine.
  5. Pour the mixture into molds or glasses and chill in the refrigerator for at least 3-4 hours.
  6. Garnish with fresh strawberries and shredded coconut before serving.
