Method
 

Preparation Steps
  1. In a large mixing bowl, combine plain Greek yogurt, creamy peanut butter, maple syrup, and vanilla extract. Whisk until smooth and creamy, about 2-3 minutes.
  2. Line a medium-sized baking dish with parchment paper. Scoop half of the yogurt-peanut butter mixture into the pan and spread evenly. Insert popsicle sticks and press gently.
  3. Spoon the remaining yogurt mixture over the first layer and spread until smooth.
  4. Sprinkle roasted and salted peanuts over the top layer if desired and press down gently.
  5. Place the pan in the freezer for at least 2 hours or until solid.
  6. Melt chocolate chips and coconut oil together in a microwave-safe bowl in 30-second intervals, stirring until smooth.
  7. Remove the bars from the pan and dip each bar into the melted chocolate, then return to the lined pan.
  8. Freeze again for about 15-30 minutes until the chocolate hardens.
