Preparation Steps
- In a large mixing bowl, combine plain Greek yogurt, creamy peanut butter, maple syrup, and vanilla extract. Whisk until smooth and creamy, about 2-3 minutes.
- Line a medium-sized baking dish with parchment paper. Scoop half of the yogurt-peanut butter mixture into the pan and spread evenly. Insert popsicle sticks and press gently.
- Spoon the remaining yogurt mixture over the first layer and spread until smooth.
- Sprinkle roasted and salted peanuts over the top layer if desired and press down gently.
- Place the pan in the freezer for at least 2 hours or until solid.
- Melt chocolate chips and coconut oil together in a microwave-safe bowl in 30-second intervals, stirring until smooth.
- Remove the bars from the pan and dip each bar into the melted chocolate, then return to the lined pan.
- Freeze again for about 15-30 minutes until the chocolate hardens.
