- Cut the chicken breasts into even, bite-sized pieces and pat them dry.
- In a large mixing bowl, combine eggs, cream cheese (or ricotta), Parmesan, garlic powder, salt, pepper, and baking powder. Mix until smooth and fluffy.
- Gently fold the chicken pieces into the coating mixture until well coated.
- Sprinkle breadcrumbs or almond flour over the coated chicken pieces and press gently to adhere.
- Arrange the coated chicken pieces on the prepared baking sheet with space in between.
- Bake in the preheated oven for 25 to 30 minutes until golden and crispy, checking that internal temperature reaches 165°F (74°C).
