Method
 

Step-by-Step Instructions
  1. In a mixing bowl, whisk together soy sauce, oyster sauce, hoisin sauce, sesame oil, cornstarch, brown sugar, and red pepper flakes until smooth.
  2. Heat vegetable oil in a large skillet over medium-high heat.
  3. Add ground chicken to the skillet, breaking it apart as it cooks for 4 to 5 minutes until it's no longer pink.
  4. Push chicken to one side, add onion and cook for about 2 minutes until softened.
  5. Stir in garlic and ginger, cooking for an additional minute.
  6. Add water chestnuts, cooking for 2 minutes.
  7. Pour the prepared sauce over the chicken mixture, stirring to coat everything evenly, and cook for another 1 to 2 minutes until thickened.
  8. Taste and adjust seasoning if necessary, stir in a splash of rice wine vinegar and half of the chopped green onions.
  9. Transfer the filling to a serving bowl and garnish with remaining green onions and sesame seeds.
  10. Serve warm chicken filling with fresh lettuce leaves.
