- Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish.
- Dice the onion and both bell peppers into uniform pieces and set aside.
- Brown the ground sausage in a skillet for 5–7 minutes until fully cooked, then transfer to a plate.
- Sauté the diced onion and bell peppers in the same skillet for 3-4 minutes until softened.
- Break stale biscuits into bite-sized pieces and layer in the bottom of the greased baking dish.
- Sprinkle the browned sausage and sautéed vegetables over the biscuits.
- Sprinkle 1.5 cups of freshly shredded Gruyère cheese over the top.
- Whisk together eggs, half and half, kosher salt, and black pepper until smooth.
- Pour the egg mixture evenly over the casserole layers and let rest for at least 30 minutes.
- Bake for 35-40 minutes until the edges are golden and the center jiggles slightly.
- Cool for 5 minutes before serving.
