Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish.
  2. Dice the onion and both bell peppers into uniform pieces and set aside.
  3. Brown the ground sausage in a skillet for 5–7 minutes until fully cooked, then transfer to a plate.
  4. Sauté the diced onion and bell peppers in the same skillet for 3-4 minutes until softened.
  5. Break stale biscuits into bite-sized pieces and layer in the bottom of the greased baking dish.
  6. Sprinkle the browned sausage and sautéed vegetables over the biscuits.
  7. Sprinkle 1.5 cups of freshly shredded Gruyère cheese over the top.
  8. Whisk together eggs, half and half, kosher salt, and black pepper until smooth.
  9. Pour the egg mixture evenly over the casserole layers and let rest for at least 30 minutes.
  10. Bake for 35-40 minutes until the edges are golden and the center jiggles slightly.
  11. Cool for 5 minutes before serving.
