  • 20 oz Rotel Tomatoes with Green Chilis Two 10 oz cans
  • 1 tsp Chili Powder Adjust to taste
  • 1 tsp Kosher Salt Adjust to taste
For the Tacos
  • 8 small Yellow Corn Tortillas Or swap for crunchy taco shells
  • 2 cups Iceberg Lettuce Shredded for texture
For Toppings
  • 1 cup Sour Cream For a creamy balance
  • 2 pcs Limes Freshly squeezed for juice
  • 1 cup Cilantro Sprigs For garnish

Method
 

Steps
  1. In a large, non-stick skillet, heat pan over medium-high heat before adding ground beef. Cook for about 5 minutes, stirring occasionally until browned.
  2. Stir in Rotel tomatoes, chili powder, and kosher salt into the browned beef. Cook for 7-10 minutes until liquid evaporates.
  3. In a dry skillet, heat tortillas over medium-high for 15-30 seconds on each side until hot and golden.
  4. Build tacos with beef mixture, shredded lettuce, mango salsa, lime juice, sour cream, and cilantro. Serve immediately.
