Ingredients
  

For the Meatloaf
  • 1 pound Ground Chicken
  • 1 cup Grated Parmesan Cheese split for incorporation and glaze
  • 1 cup Panko Breadcrumbs regular breadcrumbs can be used
  • 2 large Eggs acts as a binder
  • 4 cloves Garlic minced, fresh
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • 1 teaspoon Dried Basil
  • 1 teaspoon Dried Parsley
  • 1 teaspoon Salt adjust to taste
  • 1 teaspoon Black Pepper adjust to taste
  • 1/2 cup Whole Milk
For the Glaze
  • 2 tablespoons Unsalted Butter
  • 2 cloves Garlic minced
  • 1/2 cup Grated Parmesan for the glaze
  • 2 tablespoons Chopped Parsley for garnish

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and prepare a baking sheet or loaf pan lined with parchment paper.
  2. In a large mixing bowl, combine ground chicken, grated Parmesan, panko breadcrumbs, eggs, minced garlic, garlic powder, onion powder, dried basil, dried parsley, salt, black pepper, and whole milk until just combined.
  3. Transfer the mixture to the prepared baking sheet or loaf pan, shaping it into a loaf approximately 2 inches high.
  4. Bake the meatloaf for 40-45 minutes, checking with a meat thermometer; it should read at least 165°F (74°C).
  5. While baking, melt unsalted butter in a small saucepan, add minced garlic and sauté for 2 minutes. Stir in additional grated Parmesan and chopped parsley.
  6. Brush the glaze over the baked meatloaf and return it to the oven for an additional 5-7 minutes.
  7. Let the meatloaf rest for about 10 minutes before slicing to allow juices to redistribute.
  8. Slice and serve, garnished with additional chopped parsley and enjoy!
