- Preheat your oven to 350°F (175°C).
- Heat 2 tablespoons of olive oil in a skillet over medium-high heat and add ground beef. Cook for 5 to 7 minutes until browned.
- Push the cooked beef to one side and add diced onions and minced garlic. Sauté for 3 to 4 minutes until onions are translucent.
- Sprinkle taco seasoning over the beef and onions. Stir for about 1 minute until well combined.
- Lay out large flour tortillas on a clean surface. Spread refried beans across the center of each tortilla.
- Layer each tortilla with seasoned beef mixture, a scoop of rice, and a sprinkle of cheese. Roll the tortillas tightly.
- Place the rolled burritos seam-side down in a large oven-proof skillet.
- Pour red enchilada sauce over the burritos and sprinkle remaining cheese blend on top.
- Bake for 25 minutes until cheese is melted and slightly golden.
