  • 1 medium Onion Sweet Vidalia or white
  • 2 tablespoons Taco Seasoning Consider reduced sodium
  • 1 can Refried Beans 16-ounce can
  • 1 cup Precooked Rice Spanish rice preferred
For the Tortillas & Toppings
  • 4 large Flour Tortillas 10-inch tortillas
  • 1.5 cups Mexican Shredded Cheese Blend plus more for topping
  • 1 cup Red Enchilada Sauce medium heat
  • 1 tablespoon Cilantro Optional, can substitute with green onions

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C).
  2. Heat 2 tablespoons of olive oil in a skillet over medium-high heat and add ground beef. Cook for 5 to 7 minutes until browned.
  3. Push the cooked beef to one side and add diced onions and minced garlic. Sauté for 3 to 4 minutes until onions are translucent.
  4. Sprinkle taco seasoning over the beef and onions. Stir for about 1 minute until well combined.
  5. Lay out large flour tortillas on a clean surface. Spread refried beans across the center of each tortilla.
  6. Layer each tortilla with seasoned beef mixture, a scoop of rice, and a sprinkle of cheese. Roll the tortillas tightly.
  7. Place the rolled burritos seam-side down in a large oven-proof skillet.
  8. Pour red enchilada sauce over the burritos and sprinkle remaining cheese blend on top.
  9. Bake for 25 minutes until cheese is melted and slightly golden.
