Salad
  • 4 cups Spinach Leaves can swap with kale or mixed greens
  • 3 cups Grape Tomatoes or diced ripe tomatoes
  • ½ English Cucumber or zucchini if unavailable
  • ½ Red Onion omit or substitute with green onions
  • 4 oz Feta Cheese can replace with goat cheese
  • ¼ cup Pumpkin Seeds or sunflower seeds as substitute
  • Salt to taste
  • Black Pepper to taste

Method
 

Preparation
  1. In a small mixing bowl, whisk together the dressing ingredients until combined.
  2. In a large salad bowl, combine spinach, tomatoes, cucumber, and onion. Toss gently.
  3. Sprinkle with pumpkin seeds and crumble feta over the top. Fold gently to mix.
  4. Drizzle the dressing over the salad. Toss lightly to coat.
  5. Serve immediately, or refrigerate without dressing for up to 24 hours.
