- In a large mixing bowl, whisk together the mayonnaise, red wine vinegar, garlic powder, oregano, and salt and pepper until smooth and creamy.
- Add shredded iceberg lettuce, sliced red onion, and sliced banana peppers to the dressing and toss gently until coated.
- Slice the sub rolls horizontally and layer salami, pepperoni, turkey, and provolone cheese on the bottom half.
- Preheat the oven’s broiler for 5 minutes. Place assembled sandwiches on a baking sheet and broil for 2 to 3 minutes until cheese is melted.
- Add fresh tomato slices on top of melted cheese and pile on the salad mix.
- Sprinkle grated parmesan over the salad mixture, close sandwiches, and cut in half for serving.
