  • 1 cup Mozzarella Cheese part-skim mozzarella melts best
  • 0.5 cup Parmesan Cheese or Pecorino Romano
  • 2 tablespoons Olive Oil or any neutral oil
  • 1 loaf Baguette or gluten-free bread
  • 1 teaspoon Oregano
  • 1 teaspoon Black Pepper

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C). Gather all your ingredients.
  2. Heat olive oil in a large skillet over medium-high heat and brown the cubed chicken for 5-7 minutes.
  3. In a large bowl, combine cherry tomatoes, sun-dried tomatoes, garlic, basil, balsamic vinegar, salt, oregano, and black pepper.
  4. Add the browned chicken to the tomato mixture and toss until evenly coated.
  5. Spread the mixture into a greased casserole dish.
  6. Sprinkle mozzarella and Parmesan cheese over the top.
  7. Arrange baguette slices on top and drizzle with olive oil.
  8. Bake for 25-30 minutes until the cheese is bubbly and the baguette is golden.
  9. Allow to cool for a few minutes before serving.
