- In a mixing bowl, combine ½ cup of mayonnaise, 8 oz of softened cream cheese, and 2 cups of grated sharp cheddar cheese. Mix until smooth and creamy, using an electric mixer for ease.
- Stir in 1 cup of chopped pimento peppers, ¼ cup of minced chives, the juice of 1 lemon, and a pinch of kosher salt and freshly ground black pepper to the cheese mixture. Blend thoroughly.
- Cover the cheese mixture with plastic wrap and refrigerate for at least 1 hour.
- Blend 4 tablespoons of softened unsalted butter with ¼ teaspoon of kosher salt and 1 teaspoon of Italian seasoning in a separate bowl until smooth.
- Spread the butter mixture on one side of each slice of rustic bread. Place half the slices, butter side down, on a clean surface, add a scoop of pimento cheese, and top with remaining slices (butter side up).
