- Preheat your skillet or griddle over medium heat for about 2-3 minutes.
- Spread unsalted butter evenly on one side of each slice of sourdough bread.
- On the unbuttered side, spread about 1 tablespoon of apple butter and layer thin slices of creamy Brie.
- Add optional thinly sliced apples and fresh thyme leaves on top of the Brie.
- Place the remaining slices of bread on top, buttered sides facing out.
- Cook the assembled sandwiches in the preheated skillet for 3-4 minutes on each side.
- Once golden and melted, remove the sandwiches and let them cool slightly before slicing.
