Prepare the Cheesecake
- Preheat your oven to 325°F (163°C).
- Crush the graham crackers and mix with melted butter. Press into the bottom of a springform pan and bake for 10 minutes.
- Toast kataifi dough in a skillet until golden brown, mix with pistachio paste and tahini.
- Beat cream cheese until smooth, then add sugar, pistachio paste, sour cream, tahini, and eggs. Mix until combined.
- Layer half the kataifi mixture on the crust, pour in the cheesecake batter, wrap the pan in aluminum foil, and place in a water bath.
- Bake for 60-70 minutes until edges are set and center jiggles slightly.
- Turn off the oven, crack the door, and let cheesecake cool for 1 hour. Refrigerate for at least 6 hours.
- Make ganache by heating heavy cream, pouring over chocolate, and whisking until smooth.
- Spread ganache over cheesecake, sprinkle remaining kataifi, and let it sit for 20 minutes before slicing.
