  • 15 oz Diced Tomatoes (canned)
  • 1 can Kidney Beans drained and rinsed
  • 8 oz Tomato Sauce
  • 1 tbsp Dried Oregano
  • 1 tbsp Dried Basil

For the Vegetables
  • 2 cups Frozen Mixed Vegetables or fresh veggies like bell peppers or zucchini
  • 3 cups Cooked Rice or Pasta or quinoa to lower carbs
For the Topping
  • 1 cup Cheddar Cheese (shredded) or Monterey Jack

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking dish.
  2. In a large skillet over medium heat, brown the ground beef for about 7–10 minutes. Drain excess fat.
  3. Add chopped onion and minced garlic to the skillet, sautéing for 3–5 minutes until onions are translucent.
  4. Mix in the diced tomatoes, kidney beans, tomato sauce, oregano, basil, salt, and pepper. Cook for another 3–5 minutes.
  5. Add the frozen mixed vegetables and simmer for an additional 5 minutes.
  6. In a large bowl, combine the cooked rice or pasta with the beef and vegetable mixture.
  7. Transfer the mixture to the greased baking dish and smooth out the top.
  8. Sprinkle the shredded cheddar cheese generously over the top.
  9. Cover with foil and bake for 25 minutes, then remove the foil and bake for an additional 10–15 minutes.
  10. Let the casserole cool for a few minutes before serving.
