Ingredients

For the Pasta
  • 8 ounces Pasta Any shape like penne or fusilli
For the Sauce
  • 1 pound Lean Ground Beef Can substitute with ground turkey or chicken
  • 1 cup Greek Yogurt Can swap for sour cream or dairy-free yogurt
  • 1/2 cup Grated Parmesan Cheese Pecorino Romano can replace it for a sharper flavor
  • 1 can (14.5 ounces) Diced Tomatoes Drain well if too watery
  • 1 cup Beef Broth Vegetable broth works as a lighter substitute
  • 1 tablespoon Olive Oil Can use any neutral oil like canola
  • 3 cloves Garlic Fresh minced garlic is preferred
  • 1 medium Onion Shallots can be used for a milder taste

Equipment

  • Large skillet

Method

Step-by-Step Instructions
  1. In a large skillet, heat 1 tablespoon of olive oil over medium heat until shimmering. Add 1 pound of lean ground beef, breaking it apart as it cooks. Stir occasionally for about 5-7 minutes, or until the beef is browned and fully cooked. Drain any excess fat.
  2. Add 1 chopped onion and 3 minced cloves of garlic to the skillet with the cooked beef. Sauté for about 2-3 minutes until the onion becomes translucent and fragrant.
  3. Stir in 1 can of diced tomatoes and 1 cup of beef broth. Bring the mixture to a gentle simmer over medium heat for approximately 5 minutes.
  4. Reduce the heat to low and mix in 1 cup of Greek yogurt and 1/2 cup of grated Parmesan cheese. Stir until creamy and smooth.
  5. Add your cooked pasta (about 8 ounces) to the skillet, gently folding it into the creamy beef sauce and cooking for another 1-2 minutes.
  6. Plate your High Protein Creamy Beef Pasta immediately, garnishing with extra grated Parmesan or fresh herbs if desired.

Ensure to drain the diced tomatoes thoroughly to avoid a watery sauce. If your sauce is too thin, consider adding a cornstarch slurry or cream cheese.
