Preparation Steps
  1. Preheat your oven to 325°F (160°C) and grease a 9-inch springform pan.
  2. Combine graham cracker crumbs and melted butter in a mixing bowl. Press mixture into the bottom of the springform pan.
  3. In another bowl, mix cream cheese, powdered sugar, heavy cream, and vanilla extract until smooth and creamy.
  4. Melt white chocolate, let cool slightly, then stir into the cream cheese mixture along with the chopped pistachios and eggs.
  5. Pour filling over the crust. Bake for 45-50 minutes until edges are set and the center wobbles slightly.
  6. Cool at room temperature for about an hour, then refrigerate for at least 4 hours or overnight before serving.
