Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a mixing bowl, beat together softened cream cheese, granulated sugar, and a splash of vanilla extract until smooth.
  3. In a separate bowl, whisk together all-purpose flour, baking powder, and salt.
  4. Combine melted butter, eggs, whole milk, and remaining vanilla extract in a large mixing bowl.
  5. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  6. Gently fold in the diced strawberries into the muffin batter.
  7. Spoon the muffin batter into the prepared muffin cups, filling halfway, and add a dollop of cream cheese mixture on top.
  8. Bake for 18-22 minutes, checking for doneness with a toothpick.
