- Preheat the oven to 375°F (190°C) and grease a 9x13-inch baking dish.
- In a large mixing bowl, combine the cooked brown rice, diced chicken, broccoli, and carrots, folding gently until mixed.
- In a separate bowl, whisk together the chicken broth, Greek yogurt, garlic powder, onion powder, thyme, salt, and pepper until creamy.
- Pour the sauce over the chicken and rice mixture and stir gently to coat evenly.
- Transfer the mixture into the greased baking dish, spreading evenly. If using cheese, sprinkle it over the top.
- Cover with aluminum foil and bake for 25 minutes, then remove the foil and bake for another 15-20 minutes until chicken is cooked through.
- Let it rest for about 5 minutes before serving.
