Method
 

Cooking Instructions
  1. Preheat the oven to 375°F (190°C) and grease a 9x13-inch baking dish.
  2. In a large mixing bowl, combine the cooked brown rice, diced chicken, broccoli, and carrots, folding gently until mixed.
  3. In a separate bowl, whisk together the chicken broth, Greek yogurt, garlic powder, onion powder, thyme, salt, and pepper until creamy.
  4. Pour the sauce over the chicken and rice mixture and stir gently to coat evenly.
  5. Transfer the mixture into the greased baking dish, spreading evenly. If using cheese, sprinkle it over the top.
  6. Cover with aluminum foil and bake for 25 minutes, then remove the foil and bake for another 15-20 minutes until chicken is cooked through.
  7. Let it rest for about 5 minutes before serving.
