  • 2 medium Eggplant sliced
  • 8 oz Mushrooms chopped
  • 1 lb Mild Italian Chicken Sausage cooked and crumbled
  • 2 cups Marinara Sauce homemade or low-sugar
For the Creamy Filling
  • 2 cups Cottage Cheese high-protein alternative to ricotta
  • 1 cup Mozzarella Cheese shredded, low-fat optional
  • 1/2 cup Parmesan Cheese grated
For the Final Touch
  • 1/4 cup Parsley fresh, chopped

Method
 

Cooking Steps
  1. Preheat the oven to 400°F (200°C) and prepare a baking sheet lined with parchment paper.
  2. Slice the eggplant into thin rounds and roast them on the baking sheet for about 20 minutes.
  3. In a mixing bowl, combine cottage cheese, chopped mushrooms, and cooked chicken sausage. Stir in half of the mozzarella cheese.
  4. Layer the lasagna with marinara sauce, roasted eggplant, and cottage cheese mixture, finishing with marinara and remaining mozzarella.
  5. Cover with aluminum foil and bake for 30 minutes. Remove foil and bake for an additional 10 minutes until golden.
  6. Let cool for 5-10 minutes, garnish with parsley, and serve.
