  • 1 cup Bell Peppers diced, any color
  • 4 each Green Onions chopped
  • 6 each Eggs room temperature
  • 1 tbsp Butter for greasing the pan, can swap with oil
  • 1 tsp Salt
  • 1 tsp Pepper

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking pan with butter.
  2. Slice the mushrooms, dice the bell peppers, and chop the green onions.
  3. In a skillet over medium heat, melt 1 to 2 tablespoons of butter and sauté the mushrooms until golden brown, about 4-5 minutes.
  4. Add the diced bell peppers and cook for an additional 3-4 minutes until softened.
  5. Beat the eggs in a bowl until frothy, then mix in the cottage cheese until well combined.
  6. Fold the sautéed veggies and chopped green onions into the egg mixture, adjusting seasoning if needed.
  7. Pour the mixture into the greased baking pan and smooth the top.
  8. Bake for 40-45 minutes until the top is golden brown and the center is set.
  9. Let cool for 10 minutes before slicing and serving warm.
