Preparation Steps
- Wash 4 cups of fresh kale thoroughly under cold water. Pat dry and remove tough stems. Tear the kale into bite-sized pieces and place in a large mixing bowl.
- Drizzle kale with 1 tablespoon of olive oil and a pinch of salt. Massage the kale with hands for 2–3 minutes until leaves are darker and softer.
- Slice the avocado in half, remove the pit, and scoop out the flesh. Dice the avocado and fold it into the kale.
- In a small mixing bowl, whisk together the juice of 1 lemon, 1 tablespoon of honey, and 1 tablespoon of olive oil until combined.
- Pour the dressing over the kale and avocado mixture. Gently toss until evenly coated and allow to sit for 5 minutes.
- Taste and adjust seasoning with salt and pepper as desired. Serve in bowls and garnish with optional toppings.
