  • 4 cups Fresh kale Washed and torn into bite-sized pieces
  • 1 tablespoon Olive oil For massaging the kale
  • 1 ripe Avocado Sliced and diced into small cubes
  • 1 tablespoon Honey Can substitute with maple syrup for a vegan option
  • 1 tablespoon Olive oil For the dressing
  • 1 juice Lemon Freshly squeezed

Method
 

Preparation Steps
  1. Wash 4 cups of fresh kale thoroughly under cold water. Pat dry and remove tough stems. Tear the kale into bite-sized pieces and place in a large mixing bowl.
  2. Drizzle kale with 1 tablespoon of olive oil and a pinch of salt. Massage the kale with hands for 2–3 minutes until leaves are darker and softer.
  3. Slice the avocado in half, remove the pit, and scoop out the flesh. Dice the avocado and fold it into the kale.
  4. In a small mixing bowl, whisk together the juice of 1 lemon, 1 tablespoon of honey, and 1 tablespoon of olive oil until combined.
  5. Pour the dressing over the kale and avocado mixture. Gently toss until evenly coated and allow to sit for 5 minutes.
  6. Taste and adjust seasoning with salt and pepper as desired. Serve in bowls and garnish with optional toppings.
