  • 1/3 cup Honey
  • 1/3 cup Chipotle Sauce Adjust to heat preference
  • 2 tablespoons Olive Oil
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • 1 teaspoon Smoked Paprika
  • 1 teaspoon Salt Adjust to taste
  • 1/2 teaspoon Pepper Adjust to taste
Smoked Gouda Mashed Potatoes
  • 2 pounds Russet Potatoes Cubed
  • 1/2 cup Whole Milk Can substitute with non-dairy
  • 4 tablespoons Unsalted Butter
  • 1 cup Smoked Gouda Cheese Shredded
  • 2 tablespoons Fresh Chives Optional, for garnish

Method
 

Marinade and Bake Chicken
  1. Prepare the marinade by whisking together honey, chipotle sauce, olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper in a mixing bowl.
  2. Marinate the chicken thighs in a resealable bag or shallow dish for 30 minutes to 2 hours.
  3. Preheat the oven to 400°F (200°C).
  4. Arrange marinated chicken thighs on a baking sheet and bake for 30-35 minutes until fully cooked.
Prepare Mashed Potatoes
  1. Boil cubed russet potatoes in a pot covered with cold water until fork-tender, about 15-20 minutes.
  2. Drain and return potatoes to the pot, then add milk, butter, and smoked gouda cheese.
  3. Mash until smooth and creamy, adjusting with more milk if needed.
  4. Season the mashed potatoes with salt and pepper to taste.
Serve
