- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine ground chicken, panko, red curry paste, garlic, ginger, fish sauce, soy sauce, beaten egg, cilantro, lime juice, and optional coconut milk. Mix gently until just combined.
- Scoop about a tablespoon of mixture and roll into a ball. Place on baking sheet with space between each.
- Bake for 18–20 minutes until golden brown and internal temperature reaches 165°F (74°C).
- While baking, whisk together the dipping sauce ingredients until smooth and creamy. Adjust with warm water if needed.
