Step-by-Step Instructions
  1. In a medium mixing bowl, pour 1 cup of hot water over 2 tablespoons of unflavored gelatin, whisking vigorously until fully dissolved. This should take about 3-4 minutes.
  2. Once the gelatin is completely dissolved, stir in 1 cup of unsweetened cranberry or raspberry juice along with 2 tablespoons of fresh lemon juice. Blend well for about 2 minutes.
  3. If you prefer your gelatin a bit sweeter, add stevia or monk fruit sweetener to the mixture, adjusting to your taste.
  4. Carefully pour the gelatin mixture into silicone molds or a glass dish, refrigerate for at least 2 hours, or until firm and jiggly.
  5. Remove from the refrigerator, slice or scoop the gelatin, and serve chilled.
