For the Dressing

Method
 

Step-by-Step Instructions
  1. Wash all vegetables under cold water. Slice the cucumber into rounds, then quarter them.
  2. Halve the grape tomatoes. Slice the soaked red onion thinly.
  3. Chop the fresh parsley into small pieces.
  4. In a bowl, whisk together olive oil, red wine vinegar, sugar or honey, dried basil, salt, and black pepper.
  5. In a large bowl, combine the cucumber, tomatoes, red onion, and parsley. Pour the dressing over and toss gently.
  6. Cover and refrigerate the salad for at least 2 hours.
  7. Before serving, stir gently and enjoy chilled.
