- Wash all vegetables under cold water. Slice the cucumber into rounds, then quarter them.
- Halve the grape tomatoes. Slice the soaked red onion thinly.
- Chop the fresh parsley into small pieces.
- In a bowl, whisk together olive oil, red wine vinegar, sugar or honey, dried basil, salt, and black pepper.
- In a large bowl, combine the cucumber, tomatoes, red onion, and parsley. Pour the dressing over and toss gently.
- Cover and refrigerate the salad for at least 2 hours.
- Before serving, stir gently and enjoy chilled.
