Making the Ice Cream Cups
- Start by peeling ripe bananas and slicing them into 1-inch chunks. Spread the banana pieces out on a parchment-lined baking sheet and freeze for at least 4 hours.
- Once frozen, blend the banana chunks with peanut butter and chocolate chips in a food processor until creamy, about 1-2 minutes.
- Spoon the mixture into cupcake liners or small cups and smooth the tops. Freeze for an additional 2 hours for firmness.
- Remove from freezer and let thaw for about 5 minutes before serving.
