  • 2 cloves Minced Garlic fresh is best
  • 1 tablespoon Honey or maple syrup for a vegan alternative
For the Wraps
  • 10-12 leaves Lettuce Leaves (Butter or Romaine) for wrapping
  • ¼ cup Chopped Green Onions for garnish
  • ¼ cup Nuts (Cashews or Peanuts) optional for garnish

Method
 

Step‑by‑Step Instructions
  1. Prep Vegetables: Wash the red bell pepper and chop it into bite-sized pieces. Cube the chicken breasts.
  2. Cook Chicken: In a skillet, heat oil over medium-high heat, sauté chicken and bell peppers for 7-10 minutes until cooked through.
  3. Sauté Mushrooms: Add remaining oil and mushrooms to the skillet, cooking for another 8-10 minutes until golden brown.
  4. Mix Sauce: Whisk together rice vinegar, tamari soy sauce, sesame oil, peanut butter, ginger, crushed red pepper, honey, and garlic in a bowl.
  5. Combine: Return chicken and peppers to the skillet, pour sauce over and stir well. Cook for an additional 5-7 minutes.
  6. Serve: Spoon the mixture into lettuce leaves, garnish with green onions and optional nuts, and enjoy fresh.
