- In a large mixing bowl, combine ½ cup of vegetable oil and 2 beaten eggs until well incorporated. Gradually add 1 box of strawberry cake mix and ½ cup of all-purpose flour, stirring until the mixture is thoroughly combined. Finally, pour in 2 tablespoons of milk to reach a soft dough consistency.
- Using a cookie scoop, form the dough into balls, about 2 tablespoons each, and roll them in granulated sugar. Place the cookie balls onto a baking tray lined with parchment paper. Cover the tray with plastic wrap and refrigerate for at least 1 hour.
- Preheat your oven to 375°F (190°C) and line baking sheets with parchment paper. Arrange the chilled cookie dough balls on the sheets, leaving space between each. Bake them for 8-10 minutes, until the edges are lightly golden and the centers remain soft.
- Immediately after removing the cookies from the oven, gently press a Hershey's Kiss into the center of each warm cookie. Allow the Strawberry Kiss Cookies to cool for a few minutes before transferring them to a wire rack.
